Mediterranean scramble

1 tbsp. Coconut oil
4 oz. Italian sausage
3 cups fresh Spinach
2 medium Roma tomatoes, seeded and diced
4 large eggs, slightly beaten 
Fresh basil, thinly sliced
Sea salt and Pepper, to taste

Heat oil in a large plan, over medium heat.

Add the sausage, breaking it into small pieces as you cook it, until it is cooked.

To that, add the tomatoes and then spinach and cook until the spinach has wilted.

Add the eggs, keep stirring until egg is cooked.  Add the basil and season to taste.
