FLOUR TORTILLAS

 4 1/2  CUPS FLOUR 1 tsp. SALT 2 1/2 CUPS HEAVY CREAM Mix all ingrediants together and kneed until smooth and soft (about 15 to minutes).   Cut into twelve parts and roll into balls.   Cover up and leave for about 20 minutes.   Roll into ball into a thin disk, about 8 inches.   On a very lightly greased pan, fry each disk, both sides.  

EASIEST HOMEMADE PITA BREAD RECIPE

  500 – 530 g (17-18.5 oz. or 2 1/4 Cups) strong white bread flour or  50 % white and 50% whole-wheat flour 360g  ( 12.7 oz . or 1 1/2 Cups) lukewarm (40C/ 104F) 3 tsp  dry instant yeast 1 tsp  salt   1 tsp  sugar   To prepare this pitta bread recipe add in a mixer’s bowl the  yeast ,  sugar  and  water  and blend to dissolve the yeast. Set aside for 5-10 minutes until yeast froths. Add the  flour  and  salt  and mix using the dough hook for 6-8 minutes.    Alternatively you could mix the ingredients by hand.   Depending on the flour used, the dough may need a little bit less or more flour than this pita bread recipe calls for. After mixing for a while the dough for your pita bread should become an elastic ball and a bit sticky. FRENCH BREAD ROLLS

1 1/2 Cups Warm Water 1 Tablespoon Yeast 2 Tablespoon Cane Sugar 2 Tablespoon Vegetable Oil 1 teaspoon Salt 4 Cups Flour In the bowl of the mixer, combine the water, sugar and to that add the yeast. Let it rest for about 10 minutes until it gets nice and foamy. Once the yeast is activated, add the vegetable oil and salt.  Start mixing it using the dough hook and start adding the flour, one cup at a time, letting it mix thoroughly before adding the next cup of flour.  After you add the last cup of flour, let the machine knead the dough until it stops sticking to the sides of the bowl.  If after 10 minutes if it is still sticking, add 1/2 cup of flour and let it knead some more.  Meanwhile, prepare a bowl by lightly covering in grease.  Put the dough into the bowl and cover with a plastic paper.  Put a clean wet towel in the microwave and heat it for a minute.  Put the bowl with the dough into the microwave, don't turn it on, the dough should double in a...

2 1/4 Cups water 2 Tablespoons Sugar 1 Tablespoon Yeast 3/4 Tablespoons Salt 2 Tablespoons Avocado Oil 5 1/2 - 6 Cups Flour  In a mixing bowl, mix the water and sugar and add the yeast.  If not using Rapid or Quick Rise yeast, wait about 10-15 until foam starts to form to continue. Add the Salt, Avocado oil and start adding one Cup of Flour at a time, while running the mixer with the Dough Hook.  Dough is ready when it stops sticking to the walls of the bowl.  It might be a little sticky to the touch, but that is ok.  Cover with plastic wrap. Heat a clean wet towel in the microwave for one minute.  Put the covered bowl with the dough inside and close the door.  Let it rise to double it's size.  With this method it goes pretty quickly. SEMIT (SESAME BREAD RINGS)

2 tsp. dried yeast 1 tsp. Sugar 1/4 Cup Warm Water and 1/2 cup separately 3 cups all purpose flour, plus 1 cup separately 1 tsp. Salt 1/2 Cup Milk 1 egg, lightly beaten 80 g. sesame seed In a bowl, add the yeast, sugar and the water until it dissolves and let it stand in warm draft free place until it starts frothing and bubbling. In a large bowl, sift the flour with the salt.  Heat the milk with 1/2 cup of water.  Add to the flour and yadd the yeast mixture.  Knead the dough, adding extra flour if needed, until a soft dough forms. Move the dough unto a greased bowl, cover with plastic wrap and a towel and let it stand in a warm place until it doubles in size, about an hour. Turn the dough into a floured surface and punched it down.  Divide into 20 portions.  Roll each portion into a 8 inch long rope, shape it into a bagel, sealing the ends with water. TURKISH BREAD

1 Tbsp. dried yeast 1/2 tsp. sugar 1 1/2 Cup warm Water 4 cups flour 1 1/2 tsp. Salt 1/2 Cup Olive oil 1 egg, slightly beaten, with 2 tsp. water Sesame seeds to sprinkle on top Put the Yeast with the sugar and 1/2 cup of the warm water.  Add a bit of the flour and form a paste. Store in a warm, draft free and let it rise , become frothy and bubbly. In a large bowl, put the flour, salt, olive oile and 1 cup of  water. Add the Yeast mixture and mix together and knead until the dough is still a bit stick and flexible. Transfer doughto a  oiled bowl, cover with a plastic wrap and towel, and let it rise in a warm place for about and hour. Once the dough has about doubled in size, divide in 3 parts and roll each part into a bowl. Cover with plastic wrap or towel and leave for about 10 minutes. ENGLISH MUFFINS

3 - 4 Cups All Purpose Flour 1 Tbsp. Yeast 1 Tbsp. Salt 1.2 Tbsp. Sugar 15 Gr, Butter, softened 1 Egg, medium, slightly whisked 6 Oz. Milk Oil for greasing Put the Flour in the bowl, add the yeast on one side and the salt on the other.  Add the sugar, butter, egg and milk.  Using the hook attachment, knead the dough until soft and pliable, if needed add more flour. Grease lightly a bowl and once the dough is ready, put it in the bowl, grease the top of the dough, cover with a plastic wrap and cover with a towel.  Let it stand for about an hour. Divide the dough into 8 parts,  Shape them into circles and cover with flour. Let it stand for about 30 minutes.  Heat a heavy frying pan or a grill, on a medium heat.  Grill each side for about 5-6 minutes.

SOFT OLIVE BREAD

4 Cups all purpose Flour 1 Tbsp. quick rise Yeast 1 tsp. Sugar 1 tsp. Salt 1 1/4 Warm Water 1/4 Cup Olive Oil 1/2 Cup of pitted, sliced Olives Mix 3 Cups of flour with the yeast, sugar and salt in a large bowl,  Pour in the water and olive oil and continue to mix it on low.   When the dough seems to have come together, add the remaining flour, one spoon at a time, keep kneading until it stops sticking to the sides. Cover with a towel and let it stand for a few minutes. Add the olives slices, mixing them into the dough.  Divide the dough into 12 parts and shape into rolls, put on a baking sheet, cover them and let rise for about 45 minutes or until they double in size. Bake at 375 degrees for about 15-20 minutes.

YEAST BREAD

1 Tbsp. Active Dry Yeast 1 Tbsp. Sugar  1 Tbsp. Salt 2 Cups Warm Water 5 1/2 - 6 Cups All purpose Flour In a large bowl, mix together the yeast, sugar, salt and water.  Let it stand until the yeast starts foaming. Gradually add one cup of flour at a time, knead until the dough stops sticking to the sides of the bowl. Put the dough into a greased bowl , cover and let it rise until in doubles in side. Punch the dough down, divede into two pieces and shape them into loafs, put them on a floured baking sheet, cover and let it stand for about 45 minutes. When you are ready to bake, make 3 -4 splits on each loafs, and brush on some cold water.  Pre-heat oven to 500 degrees.  On the bollom shelve of the oven, put in a metal bowl, filled with water.  Bake the loafs at 500 degrees for 10 minutes, then decrease the temperature to 400 degrees and bake for additional 30-45 minutes. The bread should be nice and browned.

MACARONI WITH SPINACH SAUCE

1 1/2 Lbs. fresh Spinach 2 Serrano Chiles, chopped 1 1/2 Tbsp. butter 1 1/2 Tbps. fluor 1 cup hot milk 1/2 Cup Cream, add 1 Lb. macaroni 1/2 Cup grated Parmesan Cheese S & P Wash the Spinach thoroughly and discard the stems.  Cook the spinach with the water from washing the spinach, with salt and pepper to taste and the chiles.  Remove from the heat, let it cool a bit and then puree. Melt the butter, stir in the flour and cook for a while.  Add the milk, cream, S&P to taste.  Whisk until there are no lumps in the mixture, let the sauce thicken a bit and then add the spinach. Prepare the macaroni, in salted water, al dente.  Drain the pasta.  Preheat the oven to 350 degrees.  Pour some of the sauce on the buttered bottom of an ovenproof dish.  Add the macaroni and the sauce.  Sprinkle the grated Parmesan Cheese.  Bake in the oven for about 20 minutges, until cheese js golden brown.,

Fried Bread with Syrup

1 loaf egg bread, preferably a day old 2 Cups warm milk 3 Tbsp. Sugar 3 Eggs Oil Syrup 1/2 Cup Sugar 2 Cups Water 1 Cinnamon Stick 1 Star Anise 1 Cup white wine Cut the bread in 3/4 inch slices.  Arrange in a deep bowl.  Combine the warm milk and sugar and pour over the bread.  Soak for 30 minutes. Beat the eggs slightly and then, take a slotted spoon, remove each bread slice from the milk mixture, dip in the beaten eggs, and then fry in hot oil until golden.  Drain on paper towels.  Arrange the fried sliced bread on a serving platter and put the hot syrup over them. To make the syrup, cook the sugar with the water, cinnamon, and anise for about 8 minutes.  Stir in the wine and cook for about 5 minutes more.  Remove from the heat and let it cool

Piroshki Dough (for Russian Stuffed bread)

3/4 cup milk 1/3 cup butter 1 package active dry yeast                                    1tsp sugar 1/4 cup Luke warm water 1 large egg 2 large egg yolks 1 tsp. salt 4 cups all purpose Fluor In a small saucepan bring milk and butter to a boil and let it cool. In a stand mixer bowl combine yeast, sugar and 1/4 cup of lukewarm water, and let it stand until foamy. Combine the cooled down milk to the yeast mixture.  Add the egg, the yolks and salt.  Then, start adding the 3 cups of flour, one cup at a time; kneading About 10 minutes with each cup. Then add as much of the fourth cup as needed to achieve a smooth and elastic dough. I had forgotten this Venezuelan Christmas tradition  ½ cup warm water 1 tablespoon rapid rise yeast 3½ cups all purpose flour 1 stick butter, softened, plus 2 tablespoons of melted butter ½ cup milk 3 tablespoons sugar 1 egg ½ teaspoon salt ½ pound smoked ham, very thinly sliced ½ cup raisins ½ cup sliced olives 1 egg yolk Place the warm water in the bowl of a standing mixer. Sprinkle the yeast over the water and let stand for 5 minutes. Add 1 cup of the flour, the butter, and mix well using the dough hook attachment. Add the softened butter and another cup of flour and mix well. Add remaining ingredients and knead until smooth, adding a bit of extra flour if dough is too sticky. When well kneaded, the dough should be soft, shiny, and smooth. Place dough in an oiled bowl.
