MEDITERRANEAN GRILLED CHICKEN SALAD WITH CREAMY YOGURT DRESSING
For the Dressing:
- 1/4 cup Greek yogurt
- 1 lemon juice
- 1/2 tsp dried oregano
- 1/2 tsp dried mint
- 1/4 cup extra virgin olive oil
For the Salad:
- 2 chicken breasts, drizzled with olive oil, salt and pepper
- 2 cups Spring mix
- 1 medium tomato, cut in wedges
- 1 English cucumber, sliced
- 1 avocado, pit removed and sliced
- 1/4 red onion, sliced
- 1/2 cup kalamata olives
- 1/2 cup marinated artichokes
- 1/2 cup roasted red peppers, sliced into thin strips
- 1/2 cup crumbled feta cheese
- Heat the grill to medium-high heat. Grill the chicken breasts directly over the heat. After 5 minutes, flip them once Depending on how thick your chicken breast is it may take 10 minutes, or up to 15. Slice chicken into desired size for salad.
- In a small bowl, add yogurt, lemon juice, and dried herbs. Slowly drizzle in the extra virgin olive oil and whisk until fully incorporated. Thin it out with more lemon juice/oil if too thick.
- To a salad bowl, add spring mix. Arrange all other ingredients in a circle around the lettuce. Sprinkle with crumbled feta. Drizzle lots of dressing on the salad.
