MEDITERRANEAN GRILLED CHICKEN SALAD WITH CREAMY YOGURT DRESSING

 For the Dressing:

    • 1/4 cup Greek yogurt
    • 1 lemon juice
    • 1/2 tsp dried oregano
    • 1/2 tsp dried mint
    • 1/4 cup extra virgin olive oil 

    For the Salad:

    • 2 chicken breasts, drizzled with olive oil, salt and pepper
    • 2 cups Spring mix
    • 1 medium tomato, cut in wedges
    • 1 English cucumber, sliced
    • 1 avocado, pit removed and sliced
    • 1/4 red onion, sliced
    • 1/2 cup kalamata olives
    • 1/2 cup marinated artichokes
    • 1/2 cup roasted red peppers, sliced into thin strips
    • 1/2 cup crumbled feta cheese
     

  • Heat the grill to medium-high heat. Grill the chicken breasts directly over the heat. After 5 minutes, flip them once Depending on how thick your chicken breast is it may take 10 minutes, or up to 15. Slice chicken into desired size for salad.
  • In a small bowl, add yogurt, lemon juice, and dried herbs. Slowly drizzle in the extra virgin olive oil and whisk until fully incorporated. Thin it out with more lemon juice/oil if too thick.
  • To a salad bowl, add spring mix. Arrange all other ingredients in a circle around the lettuce. Sprinkle with crumbled feta. Drizzle lots of dressing on the salad.
