Irish Soda Bread

1 1/3 cups buttermilk 1 Large Egg 4 1/4 Cups all lpurpose flour 1 tsp. baking soda 1 tsp.  Salt 8 Tablespoong unsalted butter, cold and  cubed 1 Cup Raisins Preheat the oven to 400 degrees Whisk the egg and buttermilk together and set aside.  Whisk the flour, sugar, baking soda and salt together.  Add the butter and mix together until the butter is pea-sized crumbs, stir in the raisings.  Pour in the buttermilk-egg mixture and mix until too stiff to stir.  Pour the crumbling dough onto a floured surfaced and try to work into a ball. Transfer the dough on the baking sheet or pan that are using and using a very sharp knife, score an X on the top.  Cook for about 45 minutes, until the bread is golden brown. If it starts turning dark too soon, covered with a folded aluminum paper.

BliniCake

2 Eggs 2.5 Tablespoons Sugar 1 teaspoon Vanilla Extract Pinch of Salt 300 mg. Milk 180 grams Flour (sifted) 20 grams Cocoa 200 mg boiling water 25 gr. Gelatin 100 mg.  cold Water 700 Gr. Sour Cream 1 tsp. Sugar 150 Grams powder sugar 250-300 Gr. peaches 150 grams pitted cherries 150 gr. dark chocolate, broke into pices 2.5 Tablespoons Sugar 15 grams Butter In a bowl, mix the eggs, sugar and vanilla extract, to that, slowly add 1/2 of the milk.  Once it is mixed well, add sifted flour and the cocoa. Once it is mixed well with no lumps, add the rest of the milk and then the boiling water. Cover with plastic wrap and let it stand for about 20 minutes.   On a heavy lightly greased pan, over medium-high heat, prepare the blini. Set aside In a small bowl, mix the gelatin with the 100 mg. water, mix well and set aside.  Let stand for about 5 minutes. BLINCHIKI (NO YEAST)

3 Eggs 2.5 Tablespoons Sugar 1/2 teaspoon Salt 180 grams Flour 200 miligrams Milk Hot water. 2 Tablespoons vegetable oil In a bow, whisk together the eggs, sugar and Salt, add 1/2 of th flour and nix it well leaving no lumps, add the milk, mix and add the rest of the flour.  Depending on the considstency of the batter, add hot water, the batter should be on the runny side.  Finally add the two tablespoons of  oil. Heat up a heavy frying pan over medium-hiiugh heat.  Sligly grease the pan and add about 1/4 of the batter, .  Once the  top is dried,  flip the blinckik over.  

BLINI (YEASTED)

2 Cups Warm Milk 1 Tbsp. Sugar 1 teaspoon Yeast 1/2 teaspoon Salt 1 Egg 1 1/2 Cup Flour 2 Tbsp. vegetable oil  In a bowl, pour the warm milk, disolve the sugar in it and andd the yeast.  Let it stand for aout 10 minutes to let the yeast to active,  add the salt, egg and the flour, starting in the middle with whisker, start mixing,  from the middle of the bowl, mix until batter is smooth, with no lumps.  If you have lumps, pour the batter through a sifter, to get rid of them.  Finally, add the oil and mix well. Cover bowl with plastic wrap. Put the bowl in a slightly warm oven and let it stand for about an hour. Slighly grease a heavy frying pan, heat on medium high setting, when the pan is hot, add the about 1/4 cup of the batter, once the top seems try, turn it over.
